Shredded Chicken for Days ( Literally)
For this guy, I semi- followed the Paleo Perfectly recipe. I tossed it a bit more salsa and used all boneless skinless chicken thighs. In my personal opinion these are less likely to dry out and hold the flavor wayyyy better.
I cooked mine in the crockpot on low for 7 hours and then shredded. Now I have a bunch of go-to-chicken for the week. Salads, toppings, and snacks!
