Who said lunch was hard?
So this actually started out as my dinner. I had zero time after arriving home from the gym at 9:00PM. So what did I do? I tossed a sweet potato in the microwave, put some coconut oil on the frying pan and diced up some awesome Trader Joe Chicken Sausage. Once the sausage was almost cooked, I tossed on some leftover Brussels sprouts, a small handful of mushrooms and cut up about 8 grape tomatoes. I used some of my favorite spices (salt, pepper, onion powder, garlic powder). Once the sweet potato was out of the microwave I diced that up and tossed that into the frying pan as well…Once everything was mixed together I put it in a bowl and was good to go.
But hey, this easily became my AWESOME lookin’ lunch the next day when I just put my leftovers over a bed of spinach. When you make dinner, don’t think that you need a little bit of everything leftover to make another meal, just fill it!
I didn’t have enough leftovers to really “fill me up” so I put it on spinach and it was perfect!
