Whipping up Lunch – Shredded Pork

So last week I busted out the crockpot and made tons of pulled pork. The pork was super plain but I added random things to it throughout the week. To make the meat, I put a 2lbs center cut bottom roast into the crockpot with 1/2 an onion, garlic powder, salt, pepper, and about a cup of chicken broth (I didn’t have any other kind!). After 8 hours on low, I shredded that ish up and I saved the juice in a separate container to use later. this is just one example of how I used it for lunch. I tossed some BBQ sauce on the meat, made a quick sweet potato in the microwave and chopped up an avocado (topped with pepper). It was a super quick and easy lunch….just showing you one way to bring lunch to work instead of having to prep the full meal the night before.
