That time I got creative after lack of sleep and made Paleo Huevos Rancheros (ish) with a sausage tortilla.
So I lacked green chilies and green pepper – get those and add it. Also add fresh avocado – it will be good.
What did I do though?
Well lets start with what you need:
1 red pepper
2 Garlic Cloves
1 Can diced tomatoes
1/2 yellow onion
1 roll of Jimmy Dean’s sausage (you wont use all of it)
2 Frying pans
FYI: The spices I used in my sauce are from this recipe.
To start off, I put some coconut oil on a pan over medium heat and added the red pepper diced and the onion with 2 garlic cloves. Once the onions were cooked down a bit I tossed in the can of tomatoes with the spices from that awesome recipe I found and mixed it around. (If you have green chilies, add them here). I put the heat on LOW and covered for a 5 minutes ish.
While that was happening I squeezed out a decent amount of sausage and right on a frying pan flatted it out so it was “pancake” like. I turned the pan on low/medium and cooked it like a pancake – yes I made a meat tortilla.
Once the tomatoes and everything was hot, I poured the mixture in to my blender and blended it up to make a tasty sauce. When the sausage was done I put that on a plate and made my two sunny-side up eggs in the same pan (you might need to add a tiny bit of oil).
The plate: I put my eggs on the sausage tortilla, and topped with the sauce. I added a scoop of guacamole on the side to compliment it all.
Note: You can use the leftover sauce for a few days. For example, at work this morning I had two hard-boiled eggs over some sausage (it took me 10 minutes to cook up this morning while doing my make-up). I heated up some of my sauce in the microwave and poured it over the sausage, hard-boiled egg mash up. I tossed it in the microwave for about 30 seconds and boom quick breakfast at work. It did not have the beauty but man did it have the taste!
