This was the perfect meal to kick-off Thanksgiving Week with. Thanks Stupid, Easy, Paleo for helping a sister out with a going bad acorn squash and a craving for bacon. You can find the recipe by clicking the picture and going directly to her website.
Things to note:
1. I used 1/4 pound of breakfast sausage ( I had leftover Jimmy Deans) instead of ground beef
2. GO LIGT ON THE PEPPER – YIKES! I was not prepared for that. The pepper mixed with the thyme…it tasted good but kind of overpowered a bit.
3. I baked everything at 350 degrees and it was fine
This was super tasty and now I have half leftover for lunch – YES!
