This was a good idea…

20140104-123037.jpgThis 30 day paleo challenge is just what I needed to start really going through my PaleOMG cook book – OMG that’s Paleo?  I discovered this little gem for a Mexican Hash Bake and while I sipped my recovery protein, I figured why not play around with this one.

How I changed it up?

  1. I didn’t have chorizo so I just used breakfast sausage.
  2. I only used 1/2 a sweet onion.
  3. I also used Coconut Oil as my fat!
  4. I  cooked my hash in the oven for about 12-15 minutes – I just really wanted to make sure my eggs were done.

This was super super tasty and definitely makes enough for 4 or more people! Also, by not using chorizo it wasn’t nearly as spicy – Add Frank’s Red Hot if you want a kick (or just use chorizo)
