Sausage, Pepper and Onion – Paleology Original

20140119-200758.jpgSo the Patriots lost. I ate wings and sweet potato chips. I came home upset, ready to emotional eat a pizza and I realized that I was both starving and depressed. I wanted some form of food that was not paleo and not good for me. So this is what I came up with. I looked in my fridge and realized I had two chicken sausages leftover that were Sweet Italian flavored. Instantly, I wanted to make an Italian sausage roll with peppers, onions, pickles the works! I kept looking in my fridge and this is what came to me…I hope you enjoy it as much as I did!

Ingredients:
2 Italian Chicken Sausages
1/2 Can of Tomato Sauce
1/2 Yellow Onion diced
1 Garlic Clove diced
a handful of sliced mushrooms
2 Handfuls of Spinach
2 Red Peppers (1 of mine was XL)
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 Chipotle Spice
Salt and Pepper to taste

To start preheat the oven to 350 degrees. While the oven is preheating I diced my chicken sausage into small pieces. When the oven is preheated toss in your red peppers (I scoop out of the “core”) this helps makes them soft. I left those in the oven for about 10 minutes. During the ten minutes, I put a frying pan on low-medium with a little bit of olive oil. I tossed in the onion and garlic. While those were warming up I diced my mushrooms and added those to the mix. Once the onions were translucent I added in the chicken sausage and mixed it all together. Then I added in the spices! Next, toss in that tomato sauce and your handfuls of spinach (I ripped them into pieces). Mix it up!

Once your peppers are done take them out and dump out their excess water. Fill ’em up! I scooped in the mixture and filled two red peppers ( I had a little bit leftover and I just ate that). I then put them back in the oven for 20 minutes or until the top was cooked. Let them cool for a few minutes and eat you Sausage, Pepper and Onion!
