So I decided to do a hero workout on Tuesday (Veteran’s Day) and it was my first time doing LOTS of pull-ups in a while – needless to say, I ripped on both my hands and now have some forced-ish rest time (aka I just moved my rest day to Wednesday this week). So since, I have basically no dollars and had leftover pumpkin, coconut milk (from that weird brownie frozen thing I made) and cashews – this recipe seemed like the best option. Also, in my semi-broke/mini food shopping adventure earlier this week, cauliflower was on sale- How perfect right?
A few pre-warnings about this recipe:
1. It takes a bit of time to prepare – allocate accordingly. The recipe says 25 minutes – this one definitely took me around an hour to chop, etc. Just budget a bit more time for this one and deal with it.
2. If you do not have a food process with a shredding attachment, do not try to use one of those one cup blenders – just save yourself the mess and hassle and chop the cauliflower into as “rice” like as you’d like.

So I followed this recipe pretty closely actually. I would say it would have helped to have coconut oil (and not jut the spray kind) but hey – it was edible. Also for the Coconut Rice, I did not have unsweetened shredded coconut – turns out this is a pretty key ingredient. To substitute, I tried to sprinkle some coconut flour on the cauliflower just to give it a bit of a coconut flavor – this didn’t hurt but didn’t really help either. Just buy the unsweetened shredded coconut and I bet your rice will have a bit more flavor.
I did not have the cilantro to garnish, so instead I used some parsley and it still tasted awesome. I bet even dried cilantro would work if you have it on hand.
This recipe is spicy and I didn’t even use the cayenne pepper; instead, I added in a bit of paprika. I didn’t even use the full 1/2 teaspoon of paprika but a little pinch was just enough!
This makes about 3-4 meals for a single person, knowing myself, I will most likely eat this in 3 – whoops!
