A huge thank you to my good friend Jenna for this recipe and the awesomeness that is these meatballs. I don’t know what book it is from so sorry about whoever came up with this – I would give you credit I swear.
Ingredients:
3 tbsp coconut aminos (paleo soy sauce)
1/4 cup slices grean onions
1 teaspoon minced garlic
1/2 teaspoon minced ginger
1/2 teaspoon sea salt
1/2 teaspoon black pepper
1 pound of ground turkey (or you can use pork)
1 tablespoon white sesame seeds for garnish ( I didn’t have this)
1 lime, cut into wedges for garnish ( I didn’t use this either)
2 to 3 drops of fish ( definitely didn’t have this)
1. Preheat oven to 425 degrees
2. mix coconut aminos, fish sauce, green onions, garlic, ginger, salt, pepper – mix it with the meat in a bowl and combine well.
3. Form 16 meatballs ( about 1 oz each)
4. Bake for 25 minutes on a cookie sheet( I sprayed a tad bit of olive oil on it so they wouldn’t stick)
5. Garnish if you want
Boom! This was great for food prep. I have enough to toss on salads (like I did today – Kale, Tomatos and 3-4 meatballs). I actually plan on making another batch this week. So easy and so good.
