If you know me at all, you will know how much I am obsessed with burritos. They are basically the best thing on Earth. You have your meat, your veggies and AVOCADO all blended together to make a magical combination. Well since I am trying to lock up this whole – eat real food and stop feeling gross thing during this challenge, I had to have my fix and this did just that.
I started with this recipe and obviously tweaked it to fit what I had. I did not have cilantro, I actually SICK of ground meat and I most definitely used less onion since onion is weird.
I cooked my beef on the stove top with some onion powder, garlic powder, salt, pepper, chili powder and some a little EVOO. For the “rice”, I used my fancy new food processor and added the lime to make it taste wonderful. I topped with some salsa and an avocado and BAM a delicious quick dinner that I couldn’t stop eating.
